Wild Marjoram (Majorana Syriaca)
This modest & shy herb with small green-grayish leaves that feel like felt cloth is the herb that is most identified with the Galilee. Like its friends from the Mint Family, Wild Marjoram is known for its antiseptic qualities due to two ingredients - the Thymol & Carvacrol.
Wild Marjoram has been known since Biblical times as "… the Hyssop that springeth out of the wall" (Kings I,5,9) that has antiseptic qualities: "Purge me with Hyssop, and I shall be clean…" (Psalms 51, 9).
Suppose you are familiar with the scent of Oregano, another member of the mint family, which does not grow in Galilee nature? In that case, you can imagine Wild marjoram's scent, which is not as strong as Oregano's but more delicate.
This herb is also the best-known spice for food seasoning in Galilee. It is the main ingredient of the Zaatar spice mix.
Sage (Salvia Fruticosa)
The ancients believed that Sage could cure all sickness, and hence its name is Salvia – the Savior. In Galilee nature, we find the Salvia Fruticosa, with big green-grayish leaves that feel like felt cloth, and is one of the 700 sub-species of Sage in the world. The Sage has a stronger scent than the other herbs. That's why we put a tiny amount of this herb in our Galilee blend. Its unique scent has been known to alleviate breathing difficulties when catching a cold. It is also known for its antiseptic qualities due to three ingredients - Thymol, Carvacrol & Rosmerinic acid.
White-Leaved Savory (Micromeria Fruticose)
White-Leaved Savory is a shrub with very small, green-grayish plain leaves with tiny white flowers. Four of its species grow wild in the Galilee. This herb is considered the finest herb for herbal blends because, in addition to its herbalistic qualities, it is simply delicious, and its amazing scent that has a trace of mint, gives us a sense of freshness and renewal.
